Walnut and Carrot Pudding with Banana Custard

Ingredients
  

  • 1 carrot
  • 20 g crushed walnuts
  • 1/4 cup self-raising flour
  • 1 pouch of South Australian Gourmet Food Company Banana Fruit Custard with Added Fibre
  • 1 tsp honey
  • 1 tsp cinnamon optional

Instructions
 

  • Wash and peel the skin off the carrot.
  • Grate carrot into small pieces.
  • In a microwave safe container add the banana fruit custard, self-raising flour, crushed walnuts, carrot, and honey. Combine well.
  • Microwave for 2-3 minutes.
  • Sprinkle over cinnamon and enjoy
